Written for retailers, The Power of Pressure is a brief text on High Pressure Processing of food items. It briefly explains the need for new technology to preserve quality of food for a longer period. 

Three factors put pressure on existing technologies to restrict their use in the face of demand for higher quality for longer period:

1.   Perishable nature of food products;

2.   Risk of food deterioration along the supply chain; and

3.   Need for strengthening and building better brands.

The book presents how high pressure processing can be a useful resource to manage perishable nature of food items, risk of food deterioration along the supply chain, and new and existing brands of of items.
